We made butter and I am pretty excited about it!!!!
I have been wanting to make butter for so long and yesterday I was all about it. I decided that it was the day and I was not putting it off any longer. I had Ben pick me up some organic cream and I could not wait to get started. I put Ella in the high chair in the kitchen and we made butter. I was just like a little kid when I was done. I ran into the bedroom to show Ben and I was all, look look at my pretty butter.
Making butter is about the quickest easiest thing in the world to do. I remembered basics from making it many years ago but I went with the KichenAid instead of shaking a jar or going out and buying a churn.
...If you want to use the jar and shake go right ahead, but I promise it's instant gratification in the mixer...
You will need...
A stand mixer w/ whisk attachment
Heavy Cream *
Strainer
A deep bowl
A smaller bowl
Sea Salt (if desired)
*Either size container of cream is fine.. it only changes the amount of salt needed if salting butter. I used 2 of the small containers and made 1 unsalted and 1 salted.
Pour the cream into the mixer and turn on at MED-HIGH
Let it keep going as if you were making whip cream
Continue mixing past the point of whip cream
Once it starts to get curd-ish, you are getting close
When it looks like above... it's just seconds until below happens
Now turn off the mixer... shake it out of the whisk
Pour the contents into the strainer with the deep bowl...
Set deep bowl aside and rinse the butter with some water and then move the butter into the small bowl
The liquid in the deep bowl is fresh butter milk ( keep this for yummy pancakes... recipe to come soon)
Use a spatula to press the butter together... There will be some more of the butter milk that comes out when doing this... At this point you can take it in your hands and make a ball and squeeze some more milk out (I couldn't take pictures of this step)... Now if you want to salt your butter this is the time to do it, if you used the small container of cream, then a 1/4 teaspoon of salt and if you used the large container of cream use 1/2 teaspoon of salt. (recommended amounts... you can salt to your liking but start with small amounts, I accidently put the 1/2 teaspoon salt in butter made from the small container of cream and Ben said it was way to salty so I just advise to use caution when going over these amounts)
Then you can put your butter into any little dish you would like
Make sure to save the buttermilk and make something yummy
Enjoy the delicious butter... We are enjoying it to the max. I will be using homemade butter and buttermilk in Ella's birthday cake. We also made the best pancakes with the buttermilk tonight. I normally do not eat pancakes but these things were to die for!!!
Even if you do not make your own butter all the time at least do it once. Its quick, easy SUPER FUN and most of all DELICIOUS!!!
